Cranberry Tequila Fizz

The holidays means time with family and friends and I love experimenting with spirits.  A delicious and unique signature cocktail recipe can really elevate a casual holiday gathering and make for a fun conversation topic.

This cocktail uses classic holiday flavors like ginger and cranberries with a tequila twist.  It’s a simple process (a shaker or mason jar will do) with a big wow factor.

Cranberry Tequila Fizz

1 Tbsp Cranberry Sauce

1.5 oz Tequila

4 oz Ginger Ale

Shake cranberry sauce and tequila together (in a shaker or mason jar).  Pour mixture over ice and top with ginger ale.

Jalapeño Cornbread Muffins

I’m always looking for new fun ideas for food to bring to holiday parties and gatherings. Of course, old favorites are great but adding a twist to classics make for wonderful dishes to share with friends and family. I’m from Arizona where Latin flavors are found in many dishes and I know La Morena products add authentic Latino flavors to old favorites and new recipes.

Jalapeño Cornbread

Cornbread is comfort food and with this twist using La Morena whole jalapeños, I know these cornbread muffins will be a hit at our next party.  I picked up a huge can of 28oz whole jalapeños at my local Food City for a shockingly low price.  Because these muffins have a kick to them; I think they pair perfectly with an ice cold Coca Cola!

You can certainly make these using a cornbread mix, but my recipe for cornbread is already extremely simple!Jalapeño Corn Bread

Ingredients
Yields 9 muffins
Prep Time 10 minutes
Cook Time 15 minutes

La Morena Cornbread

First, preheat the oven to 425.  Set the jalapeños aside and mix all other ingredients together.  Fill a well greased muffin tin about 2/3s of the way full with the cornbread batter.  Place a sliced jalapeño in the middle of each muffin and bake for approximately 15 minutes or until golden brown.  Let cool and serve along side your favorite entree with an ice cold Coca Cola.

Bagel Thins French Toast

The holidays are right around the corner and it’s one of my favorite times of year for cooking and baking new and old favorites.

Walmart Weight Watchers

Recently, I stopped by my local Walmart to do a little shopping.  I was without kiddos so I took my sweet time walking up and down the aisles.  I walked through the bread aisle and ended up in front of the Bagel Thins and I had an idea.  I didn’t know if this idea would work but I figured if it did it’d be delicious.  I decided I was going to blend two of my favorite breakfast foods to *hopefully create a perfect holiday breakfast dish.  I don’t want to toot my own horn…but toot toot!  This Bagel French Toast is easy and amazingly delicious.  Bagel Thins (with only 3 Weight Watchers® points per serving) were the perfect vessel for this simple recipe.

Bagel Thins French Toast

Bagel French Toast

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Servings: 3
WW Points Per Serving: 4

Ingredients
3 Bagel Thins (separated)
3 Egg Whites
1/3 cup Fat Free Milk
¼ tsp Cinnamon
¼ tsp Pure Vanilla Extract

Bagel French Toast Recipe
Whisk egg whites, milk, cinnamon and vanilla together in a shallow dish and set aside.  Take 3 Bagel Thins and separate along the precut line.  Heat skillet (I prefer cast iron) to a medium heat.

Weight Watchers Recipe

Take a Bagel Thin slice and dip into the egg mixture, let sit for a moment and then turn the piece over to dunk the other side, as well.  Immediately place on hot skillet and let cook for 1-2 minutes on one side.  Flip over and allow the other side to cook to a golden brown.  Repeat with other slices.

To make it extra decadent, sprinkle powdered sugar over top.

Halloween Granola Ghost Treats

Halloween is such a fun time of year.  My whole family gets into the spirit with themed costumes and fun Halloween snacks.

These are not only fun; they are super easy, too!  My kids got a kick out of them and these would be great in a lunch box, after school or during family movie night!

Halloween Ghost Granola Treats

Ingredients:

2 granola bars

1oz white chocolate

Chocolate Chips (3 per ghost)

Halloween Snack

Melt the white chocolate in the microwave and stir.  Using a knife or popsicle stick, spread the white chocolate over the granola bars.  Be sure to cover the sides of the granola bar (but don’t worry about the back).  Set the granola bars aside and, using a knife, cut off the top part of two chocolate chips (if you have mini chocolate chips this isn’t necessary; just use mini ones as is).  You are creating the eyes of the ghost using the small pieces and the mouth is the last chocolate chip.  Let the white chocolate set and harden.  I like to pop them in the refrigerator to speed up the process.

Get Rid Of Clutter

Each year, just around the holidays, I encourage my family to go through their belongings and re-evaluate.  It can certainly be a task getting kids to really think about their things and make decisions on if they should keep, trash or donate (give away).  I take the approach of explaining how donations help others and focusing on all we do have.  Even though we are trying Want, Need, Wear and Read this year,mentioning the making room for new gifts from Santa doesn’t hurt, either).

Savers Donations

I assess the situation. Their stuffed animals were over flowing, the basket that contains the cars full and the toy animals out numbered the hairs on their heads so we dove in.  If the someone wanted to ‘keep’ an item they had to make their case.  If I got an answer like, “I don’t know.” I asked the simple question, “Why is this important to you?”.  That question gets the kids thinking and sometimes they realize that the toy or animal isn’t really important.  I try to be diligent about throwing away broken toys when it happens, but we toss anything that is broken or unable to be fixed.  We donate everything else (I go through clothes and shoes alone, donating anything they’ve out grown).  With three boys ages 5 and under this can sometimes take a while so we attack each category separately, usually one a day.

Donating at Savers

We make sure to donate somewhere it helps people locally, and for us, that is Savers.  Savers in Arizona is partnered with Big Brothers Big Sisters of Central Arizona.  We start this tradition early to ensure we have plenty of time to donate in time to claim it on taxes!  Yes!  Donating is not only great for teaching children about giving, de-cluttering and cleaning house.  It’s a tax right off, too.  In order to be eligible to include the donation, though, you must donate before the end of the year (December 31st).

Free Printable! Christmas List: Want, Need, Wear and Read

christmasThis year we are trying out a new approach to Christmas lists and gift giving.  We have fallen into a never ending cycle of ‘out-doing’ ourselves each year when it comes to piles and piles of gifts shoved under our tree.  This is not a tradition I want to continue.  I want my kids to remember the feeling of joy and fun being with their family not the endless mounds of wrapping paper after a marathon of tearing open presents they’ll barely look at later.christmas2

Luckily, 3 of our 4 kids are 5 and under and the thirteen year old is such a good kid, which will make this year’s change easier.  We are opting for a Christmas list that contains something they each want, need, will wear and to read.  This isn’t a new concept, though I truly don’t remember where I first learned of it.  We’ll still do stockings, which has always been my favorite part.  Growing up my dad made stockings such fun.  And we will likely continue our tradition of ‘family gifts’ (one year it was an Xbox Kinect, clearly mostly for the kids, but fun for the grown ups, too).  This isn’t a hard and fast new rule to Christmas presents; just one I hope will help my kids understand it isn’t about getting stuff and help me reel it in a bit more.
